Hangzhou Dishes Hangzhou is a city with rich historical heritage and colorful cultures. Hangzhou cuisine is currently one of the most popular and fashionable styles of cooking throughout China. Dongpo Pork The famous Hangzhou dish, Dongpo's pork is very delicious. This dish is made by stewing five-layered pork. The total of five layers pork meat is the most particular fact of it. The half fat, half lean meat tastes oily but not greasy, with the fragrance of wine, work up a very delicious taste.
The name of Dongpo's pork is named after Su Dongpo, a famous man of letters of the Song Dynasty. In 1089, he was in Hangzhou to control the West Lake with workers. When it was successful, he used pork and cooking wine to cook the braised pork. Soon it became one of Hangzhou's most famous dishes on the restaurants. Later, people call the dish Dongpo Pork.
Beggar's Chicken This Beggar's Chicken(also known as Baked Chicken) is a traditional Chinese dish, as popular with tourists as with far eastern gourmets. Main materials of this dish call for a chicken, lotus leaves and pond mud. Select fat and young Yue chicken, clean the chicken thoroughly, add seasonings to the chicken, wrap it with special materials, and bake it over a low fire. The Beggar's Chicken is aromatic, tasty, and soft, with tender meat.
West Lake Fish The West Lake is the most frequently mentioned scenic spot in the Chinese poetry. The lake has plenty of both romantic history and seafood. The West Lake Fish chooses Kun fish in the West Lake as its raw material. When cooking it, fire and time is very strict. Within 3 to 4 minutes, the fish should be cooked well, and then, water some sweet and sour on the fish. This dish integrates delicious tastes, and the meat tastes like crabmeat.
Green Onion Wrap Fried Bread Stick (Cong Bao Hui in Chinese) It is a famous snack in Hangzhou. First, using spring pancake to wrap a fried bread stick and several green onions, and then put it on a flat pan to bake. At last, eat it with chili sauce or sweet sauce. It is said in Southern Song Dynasty, people hated the bad minister Qinhui, who killed Yuefei. Then, they made the paste shaped like Qinhui and fried it in the pan. It is what the fried bread stick formed. And this stack is called Cong Bao Hui.
Shrimp Meat with Longjing Tea Among Hangzhou's most famous dishes, only this one, delicately flavored with the region's vegetal Longjing tea, lends itself to the home kitchen.
